Coconut Chocolate Ice Cream

This ice cream is AMAZING!!! I am not dairy-free, but with my husband being lactose intolerant, I try to make most of our meals dairy-free (or easy to make dairy free for him). That said, this ice-cream is amazing. I don’t feel like I am deprived of anything! The texture and taste is spot on :) The coconut milk providesĀ a rich and creamy texture that is sure to have you wanting more. The coconut milk is full of healthy fats to help you staying satisfied. The raw cacao has lots of vitamins, minerals, and healthy fiber. The raw honey adds just enough sweetness to tame the bitter cacao. This dessert is simple, delicious, and healthy. What’s more? The 3 ingredients used for this ice cream is 100% shelf stable – which is great for long term food storage. That’s right! This is a healthy food storage dessert that the whole family can enjoy (unless you are under 1 years old – then stay away from the raw honey!)

Coconut Chocolate Ice Cream

Ingredients:

2 cans coconut milk (15 oz each)

1/4 cup raw cacao

1/4 cup raw honey

Instructions:

1) Blend all ingredients together in a blender.

2) Pour in ice cream maker (follow the instructions for the specific ice cream machine you are using).
