Coconut Chocolate Ice Cream

Posted by on Jul 10, 2015 in Desserts, Featured, Recipes | Comments Off on Coconut Chocolate Ice Cream

This ice cream is AMAZING!!! I am not dairy-free, but with my husband being lactose intolerant, I try to make most of our meals dairy-free (or easy to make dairy free for him). That said, this ice-cream is amazing. I don’t feel like I am deprived of anything! The texture and taste is spot on :) The coconut milk provides a rich and creamy texture that is sure to have you wanting more. The coconut milk is full of healthy fats to help you staying satisfied. The raw cacao has lots of vitamins, minerals, and healthy fiber. The raw honey adds just enough sweetness to tame the bitter cacao. This dessert is simple, delicious, and healthy. What’s more? The 3 ingredients used for this ice cream is 100% shelf stable – which is great for long term food storage. That’s...

How to make Vegan Chocolate Pudding

Posted by on Aug 18, 2014 in Desserts | Comments Off on How to make Vegan Chocolate Pudding

I love chocolate pudding and this year I found some amazing recipes online that I wanted to try. I played around with the different ingredients and found that I love this recipe that I have created! This recipe is loaded with lots of healthy fat that keeps you full longer, reduces sugar cravings, and helps you absorb the nutrients from the food that you are eating (avocados are seriously one of the ‘perfect’ foods out there, don’t you think?!). You can use raw milk instead of coconut milk…but I personally prefer the coconut milk! Vegan Chocolate Pudding Ingredients:  12 oz coconut milk (put in fridge to cool and thicken to desired consistency) 1 ripe avocado 2 tablespoons raw cacoa 3-6 tablespoons coconut sugar or pure maple syrup 1 teaspoon vanilla bean powder – This ingredients is a must in my...

{Paleo & Vegan} Healthy Cadbury Eggs

Posted by on Apr 18, 2014 in Desserts, Holiday, Holiday, Recipes, Toddler/Child | Comments Off on {Paleo & Vegan} Healthy Cadbury Eggs

Cadbury Eggs were an Easter tradition growing up as a kid, and I  absolutely loved them. We usually only got one or two Cadbury Eggs in our Easter basket, so we preserved them and saved them until we were ready to devour them! Fast forward to now, and I honestly can’t remember the last time I had a Cadbury Egg. Yes, they were a fun tradition growing up, but as I have become more health conscious, I’ve decided to ditch the Cadbury Eggs and choose healthier options instead. I am so happy to say that I have found a homemade – Paleo and Vegan – version of Cadbury Eggs! It’s still candy, but a much healthier option than what Cadbury has to offer. This is something I wouldn’t mind eating or allowing my kids to eat every year for...
