Chicken Salad

I love making this easy, delicious, and healthy chicken salad recipe! This particular recipe makes a big batch, which is great to feed a lot of people at home or to bring to a potluck! You can even make this recipe and enjoy this meal for the rest of the week – and trust me, it’s good enough you’ll want to!

Ingredients:

20-25 baked Chicken Tenderloins, chopped or shredded

1 cup Vegenaise (healthy mayo replacement)

1/2 cup dried Cranberries

1/2 cup chopped Walnuts

1/2 cup chopped Celery

1 cup diced Grapes

1 tsp Poppy Seeds

You can shred it or chop it up, whichever you prefer! You can use canned chicken, but it’s not ideal. I have found that the freshly baked chicken tastes so much better than the canned stuff.

I love this stuff…one of my favorite mayo replacements!

Try to find dried cranberries that don’t have any added sugar, since it’s much healthier that way. If you don’t have dried cranberries or want to try something different, you can use dried cherries (again, no added sugar) in it’s place. Either way, it gives you some added tart flavor that goes a long way!

You can chop up the walnuts as much as you’d like. If you don’t have walnuts on hand, you can chop up some pecans instead. Both will taste delicious and are a softer nut, which is what you want for this type of recipe.

I love adding celery to recipes! Celery is extremely healthy, but something a lot of people don’t enjoy on it’s own. I like to “sneak” it in recipes and enjoy the health benefits (and added crunch!) whenever I can! 

I took each grape and cut it into four small pieces. I thought this was the perfect size, but you can cut them up even smaller, if you prefer.

I love the added color and texture that poppy seeds provide!

Instructions

Step 1) Combine all ingredients and stir together in a large mixing bowl. Keep in fridge until ready to serve.

Notes: 

Pretty easy, huh? Yes! It’s quite delicious, healthy, and the perfect meal when you just don’t feel like cooking.

You can enjoy this Chicken Salad on it’s own (see first picture in this post), on a slice of bread…

…or as a sandwich!

Chicken Kabobs

Ingredients:

8 Bamboo Kabob Skewers

2 Chicken breasts

8 Mushrooms

1 Red Pepper

1 Green Pepper

4 small Tomatoes

1 Purple Onion

Chicken Seasoning


Instructions:

Step 1) Preheat grill

Step 2) Cut up chicken, red and green pepper, onions, and tomatoes into sizes appropriate for cooking on a kabob (see photo)

Step 3) Add ingredients onto the kabob skewer, mixing up the colors and order of ingredients to add variety. Add chicken seasoning to kabobs.

Step 4) Cook on grill for 10 minutes, then rotate and cook for another 10 minutes; 20 minutes total, or until chicken is fully cooked.


 

Notes:

You can cook this in the oven, just bake at 350 degrees for about 20 minutes, or until chicken is fully cooked.

Gluten-Free Chicken Strips

This is one of those easy recipes for dinner that the entire family will enjoy!

Ingredients:

1/4 cup Brown Rice Flour

1 teaspoon Chicken Seasoning

1 1/4 cups crushed Corn Flakes 

1/2 cup Coconut Oil, melted

8-10 frozen Chicken Tenderloins (strips)

Instructions:

Step 1) Preheat oven to 400 degrees.

Step 2) Combine flour, seasoning, and crushed corn flakes in a shallow dish.

Step 3) Place melted coconut oil in a separate bowl.

Step 4) One at a time, dip pieces of chicken in coconut oil, then coat both sides of the chicken with flour and corn flake mixture.

Step 5) Place on Cookie Sheet.

Step 6) Bake at 400 degrees for 30 minutes, or until Chicken is fully cooked.

Side Notes:

I use Coconut Oil rather than Butter because of the wonderful health benefits of Coconut Oil. I use the Simply Organic® Chicken Seasoning, but you can use whichever one you have on-hand.  Also, when I buy the Corn Flakes, I get them from Nature’s Path and I buy the one that is “Fruit Juice Sweetened”, since no sugar is added.

As the name of the recipe implies, this dish is Gluten-Free and Wheat-Free and 100% delicious! Enjoy!

Breakfast Sausage chicken & apple by Applegate Farms

That’s where I am going to start off about this little breakfast sausage. I like to eat healthy, or at least have the healthier alternative, but I also think food should taste great all at the same time. Possible? Yes.

Sausage that isn’t bad for you?

I usually try to stay away from anything that says “sausage”, usually because there is a higher fat content involved amongst who knows what else. I like the idea that this breakfast sausage is gluten-free, casein free, and there are no nitrates (natrual or added)! There are only a handful of ingredients in this product. That is a good thing, since that means it doesn’t have all of these artificial and harmful filler products included. The chicken that is used was never given any antibiotics or animal by-products.

This is no ordinary breakfast sausage. It is something you won’t feel guilty eating, doesn’t take long to cook (already cooked, so you are just warming it up) and again… it actually tastes great!
