Healthy Taco Recipe for Cinco de Mayo!

To celebrate Cinco de Mayo, I thought I would share a delicious taco recipe with you!

Ingredients:

2 cups of shredded (cooked) Chicken

1 1/2 tsp Chili Powder

1/2 tsp dried Oregano

1/2 tsp ground Cumin

1/2 tsp ground Coriander

1/4 tsp Sea Salt

1 tbsp Coconut Oil

2 tsp minced Garlic

3 finely chopped Green Onions

1/4 cup Chicken Broth

1 cup cooked Quinoa

1 cup cooked Black Beans (drained)

6-8 Corn Tortillas

1/2 cup chopped Grape Tomatoes

1/8 cup shredded Cheddar & Monterey Jack Cheese

1 lime for lime zest and juice

Instructions:

Step 1) Combine chicken, chili powder, oregano, cumin, coriander,  sea salt, quinoa and beans into a bowl. Set aside.

Step 2) Heat coconut oil on a skillet at a medium heat. Add minced garlic, half of the green onions, and Sauté for about a minute. Don’t over cook, since it will burn easily.

Step 3) Add chicken mixture and Chicken Broth to the skillet for about five minutes or until warm. The broth will absorb into the chicken mixture and allow for the mix not to dry out while cooking on the stove.

Step 4) Spoon chicken mixture into tortillas. Top with tomatoes and some cheese. Top tacos with the remaining green onions and lime zest to use as a garnish. Squeeze lime juice on tacos, as desired.

Notes:

This recipe allows you to try making tacos from scratch rather than ordering from a restaurant. This way, you know exactly what you are eating, and there’s no mystery meat involved.

If you prefer a Vegetarian Taco, try tofu instead of chicken. It will work well with this recipe!

Healthy Easter Basket Ideas

Since Easter is approaching, I started to come up with some healthy and fun ideas to put into an Easter basket.

Traditionally, people like to include a lot of candy in their Easter baskets. Some of the most common treats for an Easter basket is Marshmallow PEEPS®, Cadbury Cream Eggs®, Robin’s Eggs, and Jelly Beans. These may taste great, but they are full of sugar and extremely bad for your health.

Since I didn’t want an Easter basket full of junk food, I decided to come up with some healthy ideas for those looking for new Easter basket traditions.

Ideas for an Easter Basket

• Annie’s Cheddar Bunnies or Bunny Grahams.

• Bubbles

• Trail mix

• Easter themed coloring book and crayons

• Natural nail polish – bright colors!

• Tonka plush Easter Basket

• Earthbound Farm® Mini Peeled Carrots

• Sidewalk Chalk

• Coloring kit for hard boiled eggs

• Carrot Cake flavored LÄRABAR®

• Jump rope

• Dried fruit

• Easter themed stickers

• Seed packets for favorite fruit or vegetable.

Go Green for St. Patrick’s Day!

It’s easy to be healthy while you “go green” for St. Patrick’s day! I suggest you stay away from the cupcakes with green frosting and stick to the food that is naturally green.

Green Snacks: Raw Fruits & Vegetables

Green Meal or Snack Ideas

•Make hard boiled eggs and then dye them green.

•Celery with spinach dip.

St. Patty’s Breakfast Recipe

This year, celebrate St. Patrick’s Day with a green breakfast!

You can start by ditching the Lucky Charms®, and make yourself a very easy and very green breakfast that your taste buds are sure to love!

Ingredients: 

•10 large eggs: 2 whole, 8 egg whites

•1 cup of fresh spinach

•1 teaspoon coconut oil

•Pinch of salt and/or pepper

Instructions:

Step 1) In a blender, mix the eggs and spinach until spinach is blended in thoroughly.

Step 2) Warm skillet, and add coconut oil to pan. Spread the oil to evenly distribute on the pan.

Step 3) Add egg and spinach mixture along with desired salt and pepper to the warmed skillet. Cook as you would normally cook scrambled eggs.

Notes:

The reason I choose spinach is because it’s easy to puree and it makes all of the eggs green. This recipe serves two adults.

This is a great way to add vegetables to your breakfast, and great for any time of the year – not just St. Patrick’s day!

The heart symbolizes Valentine’s Day, and it’s no surprise that February is Heart Health Month. This year, learn how you can love your heart by taking care of it!

Heart Facts

• Heart disease is the leading cause of death in the United States, and the #1 killer of women. It’s also one of the most preventable health concerns.

•Cocaine affects the heart’s electrical activity and causes spasm of the arteries, which can lead to a heart attack or stroke, even in healthy people.

•Three years after a person quits smoking, their chance of having a heart attack is the same as someone who has never smoked before.

•People that suffer from gum disease are twice as likely to have a stroke or heart attack.

How to take care of your Heart

Heart disease is a serious health concern. Every 25 seconds, an American will have a (negative) coronary event. It’s a very common problem, yet very preventable.

Now that you know that this major health concern is in your control, what are you going to do about it?

Here’s some tips that can help you – and your heart – become healthier.

Exercise – Regular physical exercise has been proven to positively effect the body, including one’s heart. If you want to have a healthier heart, exercise is a great way to use your hardest working muscle. When the heart is healthy and strong, it has a positive impact on the rest of your body.

Healthy Foods - Nutrition plays a big role in helping your heart become healthy. To help with nutrition that targets heart health, enjoy foods like Wild Salmon, tomatoes, avocados, squash, and carrots.

Avoid Tobacco – Whether your smoking or chewing it, tobacco is very dangerous for your heart and overall health. If you currently smoke, successfully quitting would be one of the healthiest things you could do for your overall health.

Avoid Stress – I know first hand how trying to avoid stress is easier said than done. I also know first hand how stress can negatively effect you, and it’s important that you do everything you can do minimize the stress in your life, and learn how to manage the stress you can’t quite get rid of.

Sleep - It’s important to get enough rest, which helps your body recover from everything it has to accomplish during the day. Getting enough sleep would be something that could help you manage your stress effectively. A lack of sleep never helped anyone.
