<p>I love creating new recipes, it&#8217;s my way of creating art. As much as I love this creation process, there are few recipes that get me <em>really</em> excited about them. This is one of those recipes that I just can&#8217;t stop smiling about. You need to try this recipe out and let me know what you think of it.  Oh yeah, it&#8217;s ridiculously healthy too.</p>
<p><strong>Ingredients: </strong></p>
<p>2 Sweet Potatoes</p>
<p>1/2 cup Maple Syrup</p>
<p>1/4 teaspoon ground Nutmeg</p>
<p>1/8 teaspoon ground Cloves</p>
<p>1/8 teaspoon All Spice</p>
<p>Cinnamon, garnish</p>
<p>crushed Pecans, garnish</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Preheat oven to 350 degrees.</p>
<p>Step 2) Peel, wash, and cut sweet potatoes into small pieces and place in a baking dish.</p>

<p>Step 3) Mix the maple syrup, nutmeg, cloves, and all spice together.</p>

<p>Step 4) Pour maple syrup mixture over the sweet potatoes.</p>

<p>Step 5) Cover pan with tin foil and bake for one hour or until extremely soft.</p>
<p>Step 6) Put sweet potatoes and maple syrup juices from the baking pan into a bowl. Use a mixer and beat until texture is smooth(similar to that of mashed potatoes).</p>

<p>Step 7) Scoop mixture in a bowl or on a plate and add cinnamon and pecans as garnish.</p>

<p><strong>Notes: </strong></p>
<p>This recipe is a great new twist to &#8220;candied yams&#8221; except it&#8217;s still healthy once you are done making it and I personally think it tastes better too. The spices give a nice warm flavor to the sweet potatoes, which is unique and something I&#8217;m sure you&#8217;ll enjoy.</p>

<p>Bruschetta looks and tastes gourmet, yet it is extremely easy to make!</p>
<p>I suggest using the artisan French baguette from a <a href="http://www.target.com/" target="_blank">Target Superstore</a> bakery. This baguette only has about 6 ingredients &#8211; all healthy &#8211; unlike their whole wheat baguette which has too many ingredients to count, and too many of them too unnatural to consider healthy.</p>

<p>1/2 cup Maple Syrup</p>

<p>Whipped Cream (garnish optional)</p>

<p>Meet my oatmeal. It&#8217;s healthy. It&#8217;s incredibly delicious. Once you try it, you&#8217;ll never go back to microwaved oatmeal again!</p>

<p><strong>Ingredients:</strong></p>
<p>3 cups Water</p>
<p>1/8 tsp Sea Salt</p>
<p>1/2 cup Steel Cut Oats</p>
<p>2 tbsp Maple Syrup</p>
<p>1 tbsp chopped Pecans</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Heat the water and sea salt and bring to a boil.</p>
<p>Step 2) Slowly stir in the steel cut oats.</p>
<p>Step 3) Reduce heat to medium and continue stirring oats until desired texture.</p>
<p>Step 4) Pour cooked oats into individual bowls and drizzle maple syrup and chopped pecans on top.</p>

I borrowed a food dehydrator from my wonderful sister-in-law (thank you!), and decided to take advantage of the situation by making healthy banana chips that have no added sugar!</p>

<p>I think you will enjoy this easy recipe. It&#8217;s so basic, can I really call it a recipe? Hmmm&#8230; I&#8217;ll let you be the judge of that.</p>

<p><strong>Ingredients:</strong></p>
<p>4 (or more) bunches of ripe Bananas</p>
<p>Spectrum® Coconut Oil Spray</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Peel the bananas and slice the bananas into 1/8 inch thick slices.</p>

<p>Step 2) Spray the dehydrator sheets with the Spectrum® Coconut Oil Spray. I recommend putting some paper towels underneath the sheets for an easier clean up.</p>
<p>Step 3) Place the banana slices on the dehydrator sheets.</p>

<p>Step 4) Follow the instructions from your dehydrator on how to dehydrate bananas. The dehydrator I used had be use the 135 temperature setting and I turned the machine on for about 8 hours.</p>
<p>Step 5) Remove the banana chips from the dehydrator sheets and enjoy!</p>

<p><strong>Notes:</strong></p>
<p>I suggest making as many banana chips as you can with the dehydrator that  you have access to. Also, you will want to make sure that you use ripe bananas, otherwise it can be a little mushy and I just don&#8217;t think that it&#8217;s the best texture for banana chips.</p>

<p><strong>Ingredients: </strong></p>
<p>2 lbs raw Tiger Prawns</p>
<p>1 tbsp Coconut Oil</p>

<p><strong>Instructions: </strong></p>
<p>Step 1) Remove the shells and de-vein the tiger prawns.</p>

<p>Sometimes you will notice a black vein that runs across the back of the shrimp or prawn. I always check for this, and make sure that I remove it before cooking. Just rinse it off with water, and rub it off if needed.</p>
<p>These are edible, but I don&#8217;t recommend leaving them on since they have a gritty texture and taste like sand.</p>

<p>This is what a deveined tiger prawn looks like (see below)</p>

<p>Step 2) Add the coconut oil and the tiger prawns to a skillet on medium-high heat.</p>

<p>Step 3) Add minced garlic and sea salt to the tiger prawns once the meat is almost thoroughly cooked.</p>
<p>Cooking Tip: To prevent the minced garlic from being overcooked, wait for the tiger prawns to become mostly cooked before adding it to the hot skillet. Let&#8217;s just say, minced garlic burns easily&#8230;</p>

<p>Step 4) Squeeze lime juice on tiger prawns once they are almost done cooking.</p>
<p>Step 5) Once tiger prawns are completely cooked (they will be pink, and no gray will be showing on the meat), place the meat on a plate.</p>
<p>Step 6) Use a grater and use lime zest for added taste and as a garnish.</p>

<p>I needed to make sure I used them up before they got old and soft. Blueberry muffins anyone?</p>

<p><strong>Ingredients: </strong></p>
<p>2 cups of GlutenFree All Purpose Baking Flour by <a href="http://www.bobsredmill.com/gf-all_purpose-baking-flour.html" target="_blank">Bob&#8217;s Red Mill</a></p>
<p>1/2 tsp Sea Salt</p>
<p>2 tsps Baking Powder</p>
<p>1/2 cup Raw Honey</p>
<p>1/3 cup melted Coconut Oil</p>
<p>1 egg</p>
<p>1/3 cup Rice Milk</p>
<p>2 cups fresh Blueberries</p>
<p>1/2 tsp Cinnamon</p>
<p>1/2 tsp Nutmeg</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Preheat oven to 400 degrees. Grease muffin cups with coconut oil spray (or melted coconut oil).</p>
<p>Step 2) In a medium sized bowl, mix the flour, salt, baking powder, honey, coconut oil, egg and rice milk. Once batter is mixed well, stir in fresh blueberries.</p>
<p>Step 3) Scoop batter evenly into each of the muffin cups.</p>
<p>Step 4) Combine the cinnamon and nutmeg together. Sprinkle over each of the muffin cups.</p>

<p>Step 5) Bake muffins for 20 to 25 minutes, or until done. You can see if the muffins are done by inserting a toothpick into the muffin; if it&#8217;s clean (no batter on it), the muffins are done. You might have blueberry get on the toothpick &#8211; If so, use another toothpick and insert it somewhere else on the muffin to check if it&#8217;s cooked through.</p>

<p><strong>Notes: </strong></p>
<p>I was thinking of naming these muffins &#8220;Blueberry Muffins for the Blueberry Lover&#8221;! haha</p>
<p>They are very sweet (for me, anyways) since they are loaded with fresh blueberries and I used raw honey in the batter, instead of a processed sugar. If you would like added sweetness, I suggest that you drizzle some melted creamed honey on top of the muffin. My husband tried this and <em>loved</em> it!</p>
<p>These blueberry muffins are delicious, moist, easy to make, gluten and lactose free!</p>
<p>This batch makes 6 large muffins. Not enough if you ask me&#8230;! ;)</p>

<p><span style="color: #000000;">I made these pancakes recently, and thought I would share this easy recipe with all of you. </span></p>
<p><strong><span style="color: #000000;">Ingredients: </span></strong></p>
<p><span style="color: #000000;">1 cup Whole Wheat Flour or <a href="http://www.skinnytwinkie.com/2011/06/gluten-free-flour-blends/" target="_blank">Gluten-Free Flour Blend</a></span></p>
<p>1/4 tsp <a href="http://www.skinnytwinkie.com/2010/05/real-salt-by-redmond/" target="_blank">Sea Salt</a></p>
<p>2 tsp Baking Powder</p>
<p>1 cup <a href="http://www.skinnytwinkie.com/2011/03/raw-milk-101/" target="_blank">Raw Milk</a> or Rice Milk</p>
<p>1 large Egg</p>
<p>2 tbsp melted <a href="http://www.skinnytwinkie.com/2010/07/virgin-coconut-oil/" target="_blank">Coconut Oil</a></p>
<p>2 ripe Bananas, mashed</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Mix the milk, egg, melted oil, and bananas and beat well.</p>
<p>Step 2) Mix in the flour, salt, and baking powder. Batter will be slightly lumpy because of the bananas.</p>
<p>Step 3) Heat skillet to a medium-low heat. Put coconut oil on the pan to prevent the pancakes from sticking to the pan. Scoop about 1/4 cup of batter onto the warmed skillet. Cook both sides until lightly browned.</p>
<p><strong>Notes:</strong></p>
<p><span style="color: #000000;">Make sure that you slowly cook the pancakes to ensure that they fully cook in the middle. </span></p>
<p><span style="color: #000000;">I suggest that you top these pancakes with pure Organic Maple Syrup. I just warm up the maple syrup first and pour a small amount on top of the pancakes. </span></p>

When following your recipe of choice, sometimes a simple one-for-one substitute doesn&#8217;t always work. Sometimes, it does. Here&#8217;s some flour blends that you can make yourself to use as a simple flour replacement.</p>

<p>I love Coconut Macaroons, and I love them even more when they are healthy! These little cookies are easy to make and taste delicious &#8211; without any processed sugar! You can eat these macaroons without the guilt!</p>
<p><strong>Ingredients:</strong></p>
<p>7 Egg Whites</p>
<p>3/4 cup Raw Honey</p>
<p>1/4 teaspoon Sea Salt</p>
<p>4 1/2 cups Unsweetened Coconut Flakes (measure after you blend the coconut flakes together &#8211; see Step 1 for instruction.)</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Blend the large coconut flakes together to make them into small pieces. Don&#8217;t over blend them to become powder, you just want to blend them well enough so the coconut flakes won&#8217;t be too big in the cookies. Set aside.</p>
<p>Step 2) Beat egg whites until stiff peaks start to form.</p>
<p>Step 3) Slowly add in raw honey as you continue to beat the egg whites. Keep moving the bowl to make sure that the honey gets mixed in very well.</p>
<p>Step 4) Take the blended coconut flakes and fold gently into the egg whites mixture.</p>
<p>Step 5) Put batter in the fridge for about 20-30 minutes. This will allow for the batter to thicken up, making it easier</p>
<p>Step 6) Preheat the oven to 250 degrees and grease cookie sheet with a little bit of coconut oil to prevent sticking.</p>
<p>Step 7) Spoon the batter in small spoonfuls onto the cookie sheet and back in the over for about 45 minutes, or until the macaroons are slightly browned. Let macaroons cool for about 5 minutes before you remove them from the cookie sheet.</p>
<p><strong>Notes: </strong></p>
<p>Make sure you remember to put the batter in the fridge, otherwise you will have difficult batter to work with and they will turn out to be flat macaroons. They will still taste good, but they just don&#8217;t look the same.</p>
<p>These are healthy macaroons, but they are still high in calories since coconut is naturally a high calorie food. My point? Eat in moderation, just like anything else.</p>

			<content:encoded><![CDATA[<p>For some crazy reason, my husband loves (loved) canned baked beans. I thought they smelled gross, and never had an urge to have any. I checked the list of ingredients and I was disgusted. I just thought &#8220;I can&#8217;t keep giving this to my husband!&#8221;. So what does one do when they are in love? They make their spouse a homemade healthy version, of course! ; )</p>
<p>I made these baked beans from scratch, and they were pretty easy and delicious! Now my husband prefers this over the canned stuff &#8211; yay!</p>
<p><strong>Ingredients:</strong></p>
<p><strong><a href="http://www.skinnytwinkie.com/wp-content/uploads/2011/05/baked_beans.png"><img class="size-medium wp-image-3745 alignright" title="baked_beans" src="http://www.skinnytwinkie.com/wp-content/uploads/2011/05/baked_beans-225x300.png" alt="" width="225" height="300" /></a></strong></p>
<p>2 cups dried Navy Beans</p>
<p>15.5 oz Turkey Bacon, cut into small pieces.</p>
<p>1/2 onion, chopped</p>
<p>3 tbsp Molasses</p>
<p>2 tsp Sea Salt</p>
<p>1/4 tsp Black Pepper</p>
<p>1/4 tsp dried Mustard</p>
<p>1 tbsp Worcestershire Sauce</p>
<p>1/4 cup Maple Syrup</p>
<p>1/2 cup Ketchup</p>
<p><strong>Instructions: </strong></p>
<p>Step 1) Cook beans on a pot with at least 10 cups of water. Boil for about 4 hours, or until tender.</p>
<p>Step 2) Preheat over to 325. Add all of the ingredients together in the pot and stir.</p>
<p>Step 3) Pour pot of all ingredients into a casserole dish. Cover with tin foil</p>
<p>Step 4) Bake for 1 hour. Let cool and enjoy!</p>
<p><strong>Notes: </strong></p>
<p>When cooking the beans, there should be very little &#8211; if any &#8211; water left in the pot by the time the beans are done cooking. If there is a lot of water in the pot, drain the water out. If there is a very little amount  of water in the pot with the beans (like 1/2 cup or less), go ahead and leave the water in there.</p>
<p>This recipe is super easy and delicious! It may take time to cook the beans, but you can definitely multi task. I would encourage you to check up on the beans to make sure that there is enough water in the pot for the beans to cook.</p>
<p>You won&#8217;t feel guilty about eating these Baked Beans, and it&#8217;s a recipe that you can show off at the next potluck!</p>

			<content:encoded><![CDATA[<p>To celebrate Cinco de Mayo, I thought I would share a delicious taco recipe with you!</p>
<p><strong>Ingredients:<a href="http://www.skinnytwinkie.com/wp-content/uploads/2011/05/HealthyTaco.png"><img class="alignright size-medium wp-image-3625" title="HealthyTaco" src="http://www.skinnytwinkie.com/wp-content/uploads/2011/05/HealthyTaco-249x300.png" alt="" width="249" height="300" /></a> </strong></p>
<p>2 cups of shredded (cooked) Chicken</p>
<p>1 1/2 tsp Chili Powder</p>
<p>1/2 tsp dried Oregano</p>
<p>1/2 tsp ground Cumin</p>
<p>1/2 tsp ground Coriander</p>
<p>1/4 tsp Sea Salt</p>
<p>1 tbsp Coconut Oil</p>
<p>2 tsp minced Garlic</p>
<p>3 finely chopped Green Onions</p>
<p>1/4 cup Chicken Broth</p>
<p>1 cup cooked Quinoa</p>
<p>1 cup cooked Black Beans (drained)</p>
<p>6-8 Corn Tortillas</p>
<p>1/2 cup chopped Grape Tomatoes</p>
<p>1/8 cup shredded Cheddar &amp; Monterey Jack Cheese</p>
<p>1 lime for lime zest and juice</p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Combine chicken, chili powder, oregano, cumin, coriander,  sea salt, quinoa and beans into a bowl. Set aside.</p>
<p>Step 2) Heat coconut oil on a skillet at a medium heat. Add minced garlic, half of the green onions, and Sauté for about a minute. Don&#8217;t over cook, since it will burn easily.</p>
<p>Step 3) Add chicken mixture and Chicken Broth to the skillet for about five minutes or until warm. The broth will absorb into the chicken mixture and allow for the mix not to dry out while cooking on the stove.</p>
<p>Step 4) Spoon chicken mixture into tortillas. Top with tomatoes and some cheese. Top tacos with the remaining green onions and lime zest to use as a garnish. Squeeze lime juice on tacos, as desired.</p>
<p><strong>Notes:</strong></p>
<p>This recipe allows you to try making tacos from scratch rather than ordering from a restaurant. This way, you know exactly what you are eating, and there&#8217;s no mystery meat involved.</p>
<p>If you prefer a Vegetarian Taco, try tofu instead of chicken. It will work well with this recipe!</p>

			<content:encoded><![CDATA[<p>The regular taco seasoning mix from the grocery store is quite&#8230;bad for you. The taco seasoning mixes are full of MSG, sodium,  and other unhealthy ingredients. Because of this, I thought it was time I let you know how to make your own healthy taco seasoning mix! It&#8217;s a pretty quick and simple recipe, and I am sure you will love it!</p>
<p><strong>Ingredients: <a href="http://www.skinnytwinkie.com/wp-content/uploads/2011/04/Taco_Seasoning.jpg"><img class="alignright size-full wp-image-3614" title="Taco_Seasoning" src="http://www.skinnytwinkie.com/wp-content/uploads/2011/04/Taco_Seasoning.jpg" alt="" width="262" height="235" /></a></strong></p>
<p>3 tsp Chili Powder</p>
<p>1/8 tsp Cayenne Pepper</p>
<p>3 tsp dried minced Onion</p>
<p>1 tsp Cornstarch</p>
<p>1/2 tsp Sea Salt</p>
<p>1 tsp Garlic Powder</p>
<p>1 tsp ground Cumin</p>
<p>1/2 tsp dried Oregano</p>
<p><strong>Instructions:</strong></p>
<p>Combine all ingredients and use in replace of taco seasoning mix.</p>
<p><strong>Notes:</strong></p>
<p>You can add this healthy seasoning to tacos, burritos, or anything else that you would normally use a typical taco seasoning mix with.  You can make it in bulk and store the mix in a air tight container in the fridge for up to a year.</p>

			<content:encoded><![CDATA[<p>This year, celebrate St. Patrick&#8217;s Day with a green breakfast!</p>
<p>You can start by ditching the Lucky Charms®, and make yourself a very easy and very green breakfast that your taste buds are sure to love!</p>
<p><strong>Ingredients: <a href="http://www.skinnytwinkie.com/wp-content/uploads/2011/03/spinacheggs.png"><img class="alignright size-medium wp-image-3063" title="spinacheggs" src="http://www.skinnytwinkie.com/wp-content/uploads/2011/03/spinacheggs-253x300.png" alt="" width="253" height="300" /></a></strong></p>
<p>•10 large eggs: 2 whole, 8 egg whites</p>
<p>•1 cup of fresh spinach</p>
<p>•1 teaspoon coconut oil</p>
<p>•Pinch of salt and/or pepper</p>
<p><strong>Instructions: </strong></p>
<p>Step 1) In a blender, mix the eggs and spinach until spinach is blended in thoroughly.</p>
<p>Step 2) Warm skillet, and add coconut oil to pan. Spread the oil to evenly distribute on the pan.</p>
<p>Step 3) Add egg and spinach mixture along with desired salt and pepper to the warmed skillet. Cook as you would normally cook scrambled eggs.</p>
<p><strong>Notes:</strong></p>
<p>The reason I choose spinach is because it&#8217;s easy to puree and it makes all of the eggs green. This recipe serves two adults.</p>
<p>This is a great way to add vegetables to your breakfast, and great for any time of the year &#8211; not just St. Patrick&#8217;s day!</p>

<p>•1 teaspoon <a href="http://www.skinnytwinkie.com/2009/12/cinnamon/" target="_blank">cinnamon</a></p>
<p><strong>Instructions:</strong></p>
<p>Step 1) Cook the rice as normal.</p>
<p>Step 2) In a pot on the stove at medium heat, combine the cooked rice, rice milk, creamed honey, and 1/2 teaspoon of the cinnamon. Stir until creamed honey is melted completely.</p>
<p>Step 3) Pour Rice Pudding into 4 bowls, and add the rest of the cinnamon on the top of each bowl as a garnish.</p>
<p><strong>Notes: </strong></p>
<p>Do you need an easy recipe that tastes delicious? This Rice Pudding recipe is very easy to make (even my husband can make this on his own!), and it&#8217;s healthy for you too. Oh yeah, you would never know that it&#8217;s gluten free and lactose free&#8230;because it tastes that good! ; )</p>

<p><span style="color: #000000;">3 tablespoons Coconut Oil</span></p>
<p><span style="color: #000000;">Garlic Powder</span></p>
<p><span style="color: #000000;">Sea Salt</span></p>
<p><span style="color: #000000;">Rosemary</span></p>
<p><strong><span style="color: #000000;">Instructions:</span></strong></p>
<p><span style="color: #000000;">Step 1) Preheat oven to 350 degrees.</span></p>
<p><span style="color: #000000;">Step 2) Cut potatoes into cubed pieces (see photo), and put into glass casserole dish. </span></p>
<p><span style="color: #000000;">Step 3) Place chunks of coconut oil throughout potatoes.</span></p>
<p><span style="color: #000000;">Step 4) Add garlic powder, sea salt,  and rosemary to potatoes. </span></p>
<p><span style="color: #000000;">Step 5) Bake for 90 minutes (covered), or until potatoes are soft.</span></p>
<p><strong>Notes:</strong></p>
<p>This is probably one of my favorite dishes. I am pretty sure I would rather have these potatoes than any &#8220;candy&#8221; out there. These are guilt-free, easy to make,  and absolutely delicious!</p>

<p><span style="color: #333333;">The variety of colors and  flavors mix well together, and this is a delicious burrito all on it&#8217;s own! Of course, you can add the red or green sauce to it if needed, but it&#8217;s definitely not a &#8220;must&#8221;.</span></p>
<p><span style="color: #333333;"> I always try to cook with as much fresh ingredients as possible, but I understand if that can&#8217;t always be the case. If you need to, use a 15 oz can of black beans in replace of the 1 cup of freshly cooked black beans. Also, there are plenty of delicious and soft Gluten-Free tortillas available if needed.</span></p>

<p>ground Cinnamon or Poppy Seeds (garnish)</p>

<p><span style="color: #000000;">Step 1)</span><span style="color: #000000;"> Preheat oven to 400 degrees.</span></p>
<p><span style="color: #000000;">Step 2)</span><span style="color: #000000;"> Combine flour, seasoning, and crushed corn flakes in a shallow dish.</span></p>

<p><span style="color: #000000;">Step 5)</span><span style="color: #000000;"> Place on Cookie Sheet.</span></p>

<p><span style="color: #000000;">I use Coconut Oil rather than Butter because of the wonderful health benefits of Coconut Oil. I use the Simply Organic® Chicken Seasoning, but you can use whichever one you have on-hand.  Also, when I buy the Corn Flakes, I get them from Nature&#8217;s Path and I buy the one that is &#8220;Fruit Juice Sweetened&#8221;, since no sugar is added. </span></p>
