A lot of people enjoy Tiger Prawns at restaurants (or any shrimp for that matter), but they don’t feel confident in making their own dish at home. My brother (who is an amazing cook!) was visiting me for a couple of days and was the inspiration for this superb dish! I made a few changes to his original recipe (buh-bye butter!), but I must give credit where credit is due. Thank you Eli! I love to buy blueberries in bulk during the Summer so I can benefit from this wonderful fruit which is full of antioxidants. I needed to make sure I used them up before they got old and soft. Blueberry muffins anyone? Ingredients: 2 cups of GlutenFree All Purpose Baking Flour by Bob’s Red Mill 1/2 tsp Sea Salt 2 tsps Baking Powder 1/2 cup Raw Honey 1/3 cup melted Coconut Oil 1 egg 1/3 cup Rice Milk 2 cups fresh Blueberries 1/2 tsp Cinnamon 1/2 tsp Nutmeg Instructions: Step 1) Preheat oven to 400 degrees. I love buying extra bananas just to let them “go bad” – it’s the perfect excuse to make delicious recipes like banana nut bread or banana pancakes! I made these pancakes recently, and thought I would share this easy recipe with all of you. Ingredients: 1 cup Whole Wheat Flour or Gluten-Free Flour Blend 1/4 tsp Sea Salt 2 tsp Baking Powder 1 cup Raw Milk or Rice Milk 1 large Egg 2 tbsp melted Coconut Oil 2 ripe Bananas, mashed Instructions: Step 1) Mix the milk, egg, melted oil, and bananas and beat well. I love Coconut Macaroons, and I love them even more when they are healthy! These little cookies are easy to make and taste delicious – without any processed sugar! You can eat these macaroons without the guilt! Ingredients: 7 Egg Whites 3/4 cup Raw Honey 1/4 teaspoon Sea Salt 4 1/2 cups Unsweetened Coconut Flakes (measure after you blend the coconut flakes together – see Step 1 for instruction.) Instructions: Step 1) Blend the large coconut flakes together to make them into small pieces. For some crazy reason, my husband loves (loved) canned baked beans. I thought they smelled gross, and never had an urge to have any. I checked the list of ingredients and I was disgusted. I just thought “I can’t keep giving this to my husband!”. So what does one do when they are in love? To celebrate Cinco de Mayo, I thought I would share a delicious taco recipe with you! Ingredients: 2 cups of shredded (cooked) Chicken 1 1/2 tsp Chili Powder 1/2 tsp dried Oregano 1/2 tsp ground Cumin 1/2 tsp ground Coriander 1/4 tsp Sea Salt 1 tbsp Coconut Oil 2 tsp minced Garlic 3 finely chopped Green Onions 1/4 cup Chicken Broth 1 cup cooked Quinoa 1 cup cooked Black Beans (drained) 6-8 Corn Tortillas 1/2 cup chopped Grape Tomatoes 1/8 cup shredded Cheddar & Monterey Jack Cheese 1 lime for lime zest and juice Instructions: Step 1) Combine chicken, chili powder, oregano, cumin, coriander,  sea salt, quinoa and beans into a bowl. The regular taco seasoning mix from the grocery store is quite…bad for you. The taco seasoning mixes are full of MSG, sodium,  and other unhealthy ingredients. Because of this, I thought it was time I let you know how to make your own healthy taco seasoning mix! It’s a pretty quick and simple recipe, and I am sure you will love it! Ingredients:  3 tsp Chili Powder 1/8 tsp Cayenne Pepper 3 tsp dried minced Onion 1 tsp Cornstarch 1/2 tsp Sea Salt 1 tsp Garlic Powder 1 tsp ground Cumin 1/2 tsp dried Oregano Instructions: Combine all ingredients and use in replace of taco seasoning mix.
