Tiger Prawns with Lime Zest

A lot of people enjoy Tiger Prawns at restaurants (or any shrimp for that matter), but they don’t feel confident in making their own dish at home. Here’s a gourmet tasting dish that is an extremely simple recipe that anyone can follow. 

Ingredients:

2 lbs raw Tiger Prawns

1 tbsp Coconut Oil

1 tbsp Minced Garlic

1/4 tsp Sea Salt

1 whole Lime (you will need lime juice and zest)

Instructions:

Step 1) Remove the shells and de-vein the tiger prawns.

Sometimes you will notice a black vein that runs across the back of the shrimp or prawn. I always check for this, and make sure that I remove it before cooking. Just rinse it off with water, and rub it off if needed.

These are edible, but I don’t recommend leaving them on since they have a gritty texture and taste like sand.

Step 2) Add the coconut oil and the tiger prawns to a skillet on medium-high heat.

Step 3) Add minced garlic and sea salt to the tiger prawns once the meat is almost thoroughly cooked.

Cooking Tip: To prevent the minced garlic from being overcooked, wait for the tiger prawns to become mostly cooked before adding it to the hot skillet. Let’s just say, minced garlic burns easily…

Step 4) Squeeze lime juice on tiger prawns once they are almost done cooking.

Step 5) Once tiger prawns are completely cooked (they will be pink, and no gray will be showing on the meat), place the meat on a plate.

Step 6) Use a grater and use lime zest for added taste and as a garnish.

Notes:

Quite honestly, this is one of those dishes that you don’t have to measure out every single ingredient perfectly. This is an easy dish to make, and I am sure you are going to love it! Enjoy!

Banana Pancakes


I love buying extra bananas just to let them “go bad” – it’s the perfect excuse to make delicious recipes like banana nut bread or banana pancakes!

I made these pancakes recently, and thought I would share this easy recipe with all of you.

Ingredients:

1 cup Whole Wheat Flour or Gluten-Free Flour Blend

1/4 tsp Sea Salt

2 tsp Baking Powder

1 cup Raw Milk or Rice Milk

1 large Egg

2 tbsp melted Coconut Oil

2 ripe Bananas, mashed

Instructions:

Step 1) Mix the milk, egg, melted oil, and bananas and beat well.

Step 2) Mix in the flour, salt, and baking powder. Batter will be slightly lumpy because of the bananas.

Step 3) Heat skillet to a medium-low heat. Put coconut oil on the pan to prevent the pancakes from sticking to the pan. Scoop about 1/4 cup of batter onto the warmed skillet. Cook both sides until lightly browned.

Notes:

Make sure that you slowly cook the pancakes to ensure that they fully cook in the middle.

I suggest that you top these pancakes with pure Organic Maple Syrup. I just warm up the maple syrup first and pour a small amount on top of the pancakes.

Rosemary Potatoes

Ingredients:

15 Red Potatoes

3 tablespoons Coconut Oil

Garlic Powder

Sea Salt

Rosemary

Instructions:

Step 1) Preheat oven to 350 degrees.

Step 2) Cut potatoes into cubed pieces (see photo), and put into glass casserole dish.

Step 3) Place chunks of coconut oil throughout potatoes.

Step 4) Add garlic powder, sea salt,  and rosemary to potatoes.

Step 5) Bake for 90 minutes (covered), or until potatoes are soft.

Notes:

This is probably one of my favorite dishes. I am pretty sure I would rather have these potatoes than any “candy” out there. These are guilt-free, easy to make,  and absolutely delicious!

The BEST Banana Nut Bread!

This is Organic, Gluten-Free, and has no processed sugars or additives. Healthy can taste great, and this recipe proves it!

Ingredients:

2 1/2 cups Brown Rice Flour

1/2 teaspoon Baking Soda

1/4 teaspoon Sea Salt

1 1/2 teaspoon Baking Powder

1/2 teaspoon Cinnamon

1/4 teaspoon ground Nutmeg

1/2 cup chopped Pecans

2 Eggs, beaten

6 ripe Bananas, mashed

1/3 cup Raw Honey

1 teaspoon Vanilla Extract

1/2 cup melted Coconut Oil Cream (or Coconut Oil)

Instructions:

Step 1) Preheat oven to 350 degrees and spray bread pan with coconut oil spray.

Step 2) Mix rice flour, baking soda, sea salt, baking powder, cinnamon, nutmeg and chopped pecans together.

Step 3) In separate bowl, mix the eggs, mashed bananas, honey, vanilla, and melted coconut oil cream.

Step 4) Add banana mixture to dry mix.

Step 5) Pour batter into your bread pan.

Step 6) Bake for 50 minutes, or until a toothpick comes out clean.

Notes:

Depending on the size of your bread pan, you may have 2 bread loaves or 1 loaf with enough batter to make some muffins!

Organic Flax Plus Maple Pecan Crunch by Nature’s Path

NP-FlaxMaple_US-webThis cereal has wonderful ingredients to truly benefit from, such as rolled oats, wheat bran, pecans, flax, brown rice flour, sea salt, cinnamon…you name it! As many of my readers know, I am a huge fan of Organic products. I know and appreciate the nutritional value of Organic products, and this is a certified USDA Organic cereal.

What is this cereal missing? Well, it does NOT include things like Trans Fat (which are formed when liquid oils are made into solid fats…not so good), it has Zero Cholesterol, and if you are a Vegetarian…you are in luck! This cereal doesn’t have any ingredients that come from meat, such as fish, fowl, or eggs, which you can thank the wonderful founders for, since it agrees with their personal beliefs and lifestyle.

So this cereal has a lot of healthy “stuff” in it. So the next important question is, “Does this cereal even taste good?” Let’s put it this way. This is seriously one of my favorite cold cereals right now. It has all of Nature’s love packed into one cereal! You will actually look forward to eating breakfast again! This cereal tastes great, and is something you will truly enjoy!
