To celebrate Cinco de Mayo, I thought I would share a delicious taco recipe with you! Ingredients: 2 cups of shredded (cooked) Chicken 1 1/2 tsp Chili Powder 1/2 tsp dried Oregano 1/2 tsp ground Cumin 1/2 tsp ground Coriander 1/4 tsp Sea Salt 1 tbsp Coconut Oil 2 tsp minced Garlic 3 finely chopped Green Onions 1/4 cup Chicken Broth 1 cup cooked Quinoa 1 cup cooked Black Beans (drained) 6-8 Corn Tortillas 1/2 cup chopped Grape Tomatoes 1/8 cup shredded Cheddar & Monterey Jack Cheese 1 lime for lime zest and juice Instructions: Step 1) Combine chicken, chili powder, oregano, cumin, coriander,  sea salt, quinoa and beans into a bowl.
